Many prime material s intervene in the elaboration of the final product, but without the principal prime material all the effort would be in vain.

They are produced by firstly being cleaned in abundant water, then marinated with wine vinegar and salt, this is how they obtain their characteristic flavour, colour and texture.

Treated with the maximum care, then prapered one by one and covered in salt and the anchovies own blood. It is then cured for a minimum of six months until it has obtained it's characteristic colour and flavor.
